Carloman Carranza Montenegro is a producer committed to his work, who performs various processes to improve quality. The main factors for coffee quality are weather conditions, soil types and water quality, essential for the washing process. This same water is from the highest mountains of the village where Carloman lives, which is called "Gracias a Dios."

 

The process begins with the selection of the matured coffee cherries, and in the afternoon, it’s time to remove the floating cherries (also known as “floaters”), which are fruits that may be dried or immature. After the first washing, the cherries are placed in barrels to ferment for 5 days, and after this time, cherries are pulped and it is fermented again for another 3 days.
