El Rubi Farm has been managed by the brothers Wilder and Nelson Lazo for 10 years. Their father used to managed for 40 years, in that time he gone through a critical period due to a pest of fungi on coffee plantations. But with the dedication and knowledge from their sons, this moment was outdated, and today El Rubi is a reference.

The process is carried out in several phases: First, the cherries are fermented for 48 hours in bags and then transferred to plastic containers for another 48 hours of fermentation. After this phase, the pulp is removed through the mechanical washing process. Then, the beans with mucilage go to a fermentation tank where yeasts are added and left to ferment for 72 hours actively. The process is finished with drying on elevated beds for 3 weeks.
