This present coffee was developed by the producer Delfin Carvajal from Finca El Corozal, located in the Huila region. Finca El Corozal has an area of 3 hectares, with 20,000 coffee trees, including the most diverse varieties such as Castillo, Caturra and other Colombian coffee varieties. Managed by brother Euclides Carvajal Córdoba, the farm is a family project that started with just 3 hectares in 2004, having expanded until 2011.

Delfin focuses essentially on optimizing drying processes, in order to preserve the physical and sensorial characteristics of the coffee. To obtain results, he embarked on a project focused on mechanical drying processes. Thanks to local financial support, their project achieved positive results in terms of preserving the grain during the drying process. Alongside his innovative projects, Delfin created an association with more than 20 members from the same region that promotes varied plantations and collaborative coffee marketing.

The coffee process is a natural with a 14h fermentation of the cherries, finishing with a mechanical drying at 36ºC.
