The decaffeinated Caoba comes from several producers from the city of Manizales. Through the efforts of producers and the local "Coffee Institute", 25 coffee-producing municipalities produce certified, sustainable and controlled coffees.

The decaffeination process is carried out in the city of Manizales, using ethyl acetate extracted from sugarcane in a natural way, which is carried out as follows:

Green coffee is placed in a tank with water until the caffeine is eliminated. This same water is reused to extract more caffeine until its content is reduced to a maximum of 0.1%. The decaffeinated coffee beans are dried until they reach 11% moisture.
